Ingredients

For the muffins:

  • 1.5 cups all-purpose flour

  • 3/4 cup sugar

  • 1/2 tsp salt

  • 2 tsp baking powder

  • 1/3 cup vegetable oil

  • 1 egg

  • 1/3 cup milk

  • 1 cup blueberries

For the crumb (optional):

  • 1/3 cup flour

  • 1/2 cup sugar

  • 1.5 tsp ground cinnamon

  • 1/4 cup butter (cubed)


Instructions

  1. Preheat the oven to 200°C.

  2. In a bowl, mix flour, sugar, salt, and baking powder.

  3. In another bowl, combine oil, egg, and milk with a wooden spoon. Add this mixture to the dry ingredients.

  4. Gently fold in the blueberries.

  5. For the crumb: Mix flour, sugar, and cinnamon, add butter, and rub with your hands to form crumbs.

  6. Grease the muffin tin or insert paper liners. Fill the cups with batter and sprinkle with the crumb mixture.

  7. Bake for 20-25 minutes until golden brown.


Tips

  • Blueberries provide antioxidants that protect cells from oxidation.

  • Check for doneness with a toothpick – it should come out clean.
